Chocolate Avocado Mousse
Ingredients
- 2 Ripe Avocados
- 1/2 Cup Coconut Milk
- 4 TB Maple Syrup
- 1/4 Tsp. Vanilla Extract
- 1/4 Cup Unsweetened Cocoa Powder
- Pinch of Cinnamon (to taste)
- Pinch of Salt
Directions
Carve up and scoop out the avocados and place all of the ingredients in a food processor. I usually pulse for a bit, scrape down the cocoa powder, and then let it roll. It will get a thicker texture after a while and that's where you want it to be. I let mine run for about 2 minutes until everything is well mixed.
Refrigerate for about an hour for the coconut milk to solidify some more. Serve and top with some blueberries or strawberries for perfection.
